HIBU is an artisan biscuiterie from the French Basque Country, founded by two pastry professionals with a simple idea: gluten-free biscuits should be just as delicious as any other.

Handmade in small batches using carefully selected organic ingredients, these little French-style biscuits are delicate, crunchy and full of character. From roasted hazelnuts and dark chocolate to traditional Basque shortbread with rum and vanilla, every flavour brings something different.

Inspired by traditional French almond tuiles. Delicate, golden biscuits made with 33% almonds and fragrant Bourbon vanilla. Light, crisp and beautifully simple.

BASQUE SHORTBREAD - Almond, Rum & Vanilla

A little taste of the Basque Country. Rich almond shortbread made with 23% almonds, organic rum and Bourbon vanilla. Warm, aromatic and gently crunchy.

PEANUT SHORTBREAD - Roasted Peanut & Sea Salt

For peanut lovers. Made with an impressive 41% roasted peanuts and finished with fleur de sel for a delicious sweet-and-salty contrast. Winner of the Natexpo Innovation Gold Award 2024.

DARK CHOCOLATE SHORTBREAD

Deep, rich and intensely chocolatey. Made with dark chocolate chips, 70% cocoa chocolate and cocoa powder for a delicate biscuit with serious chocolate character.

A familiar combination with a French pâtisserie twist. Dark chocolate chips, roasted hazelnuts, almonds and a touch of fleur de sel come together in a satisfyingly crunchy little cookie.
