L’Atelier Contal (FR)
Now, aperitif. L’Atelier Contal is quite literally farm to biscuit. The Contal family grows on its own land in the French Ardennes, mills its flours on stone mills and turns them into biscuits in the family workshop. Their gluten-free production includes their own green-lentil flour.
04. Les Mimotilles

These organic aperitif biscuits combine green-lentil flour with French Mimolette cheese aged for six months. Salty, cheesy, crisp.
→ No complicated pairing needed.
→ Open them before dinner and let them disappear.
Pasta Gustosa (IT)
Then, something for the table. Pasta Gustosa comes from a family with generations of experience in milling and working with cereals. In 2015 they created a pasta factory dedicated entirely to organic gluten-free pasta in Murgia, southern Italy. Their approach is unusually simple: flour and water, without thickeners, colorings or additives.
05. Riso + Teff Pasta

70% organic rice flour, 30% organic teff flour, water. That’s it.
Teff gives the pasta a slightly deeper, earthier character.
→ For the first plate, don’t bury it under too much sauce.
→ Olive oil, mushrooms, herbs and parmesan would be enough.
Maison Toussaint (FR)
Now coffee, and one of my personal discoveries in this box.
Maison Toussaint grew from Pascal and Corinne Toussaint’s artisan bakeries around Dijon. Corinne later developed their own handmade biscuit collection, focusing on good ingredients, traditional production and no unnecessary coloring or preservatives. These immediately reminded me of the iconic Poilâne-style French butter biscuits - the kind of simple, luxurious biscuit we rarely get to experience gluten-free. I was very happy when I found these.
06. Les Demoiselles - Citron
![]()

Rice-flour shortbread with butter, egg yolk and candied lemon.
→ Tea or coffee. Nothing else needed.
Rafa Gorrotxategi (ES - Basque Country)
This one has been on our radar for almost the entire year.
Rafa Gorrotxategi is the third generation of a Basque pastry family and grew up around the family workshop in Tolosa. His training later took him through some serious pastry institutions, including La Maison du Chocolat in Paris, before returning to the family craft. September finally felt like the right box.
07. Mixed Tiles
![]()

What exactly is a tile? Think very thin, crisp almond biscuits, delicate and caramelised. Rafa’s Tolosa version is handmade and flat, and this mixed selection combines classic almond tiles with ones covered in dark orange chocolate.
→ They’re delicate. And the chocolate versions prefer it below 20°C, so don’t leave the box beside a radiator.
Kaicao (ES)
Kaicao is a bean-to-bar cacao lab in central Madrid that does something slightly different: instead of adding refined sugar, they build their chocolate products around cacao and dates. Their cacao is processed in-house from fine-flavour beans sourced directly from farms.
08. Almonds & Sea Salt Smashed Date
The ingredient list is almost comically short: date, organic cacao beans, almonds and sea salt. The cacao comes from Öko Caribe in the Dominican Republic. Dense, dark, salty and naturally sweet.
→ It’s small, but intense. A few slow bites is the point
Gamla Stans Polkagriskokeri (SE)
After travelling around Europe, the box comes home. At Stora Nygatan 44 sits Stockholm’s only traditional polkagris cooker, where candy is still made by hand. Alongside the striped classics, they also make their own fudge in Polka, Sea Salt, Cinnamon Bun and Chocolate. We chose the obvious one for this palette.
09. Chocolate Fudge

Soft, rich, brown. Made in Gamla Stan.
Sometimes the color study really is that simple.
Crawie (SE)
Yes, Crawie again. We know they’re becoming bigger and easier to find now - and we’re genuinely happy for them. But you seemed to enjoy Sour Cola in July, and Blackcurrant landed so perfectly inside this edition that ignoring it would have been ridiculous. The surprise is the texture. Crawie describes Blackcurrant as springy, and compared with the Sour Cola it feels much softer and more jelly-like.
10. Blackcurrant

Same Crawie. Completely different bite. And yes, that violet packaging absolutely influenced the decision.
→ No unnecessary additives. → Natural flavor.
GRAINED CO. (SE)
Yes, it's us!
11. Anniversary Sticker Pack - LIFESTYLE ITEM

A small souvenir from year one: shipping labels, old transit marks, tiny codes and pieces of the GRAINED universe, designed in-house by Loic.
→ The back page tells the rest.
Ode Stockholm (SE)
And finally, we leave taste behind. Ode creates fragrances around memories, places and atmosphere. Gullsjön begins at a misty Scandinavian lake. Väpnargatan 1 remembers Stockholm’s Royal Stables. Aspirantbalen moves through a cadet ball at Karlberg Palace. Auster captures a Stockholm summer through smoke, water, hay, violet and wood. That made Ode feel unusually close to the world we’ve been trying to build at GRAINED.

12. Ode Stockholm Miniature – LIFESTYLE ITEM
Each box contains one surprise miniature:
• Gullsjön - quiet water and flowers (candle)
• Väpnargatan 1 - raspberry, saffron, leather and violet (candle)
• Aspirantbalen - tobacco, old books, cedar and vanilla (candle)
• Auster - heat, smoke, blackcurrant, hay and violet (perfume)
