A Basque pastry that sits somewhere between an almond cake and a macaron. Gorrotxas are handcrafted in Tolosa by confectioner Rafa Gorrotxategi using 45% almonds, egg yolk and sugar, creating a tender, rich texture with a pronounced almond flavour.

Inspired by the macaron but distinctly Basque, Gorrotxas use egg yolk rather than egg white and a particularly generous amount of almonds. Naturally gluten-free and presented in an elegant confectionery box, they make a beautiful accompaniment to coffee, tea or dessert.
